- 1 pound pasta penne, rotini, or your favorite shape
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
- 2 cloves garlic minced
- 1 cup chicken broth
- 5.2 oz Boursin cheese softened
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese optional
- Salt and pepper to taste
- Fresh parsley or basil for garnish
Cook pasta according to package directions. Reserve 1 cup pasta water before draining.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
Add garlic to the skillet and cook until fragrant, about 30 seconds.
Pour in chicken broth and bring to a simmer, scraping up any browned bits.
