Add potatoes and toss to coat evenly.
Spread potatoes in a single layer on a baking sheet.
Roast for 30-40 minutes, or until golden brown and crispy, flipping halfway through.
While potatoes are roasting, prepare the aioli: In a small bowl, whisk together mayonnaise, garlic, lemon juice, salt, and pepper.
Serve potatoes immediately with garlic aioli.
