Herb-Crusted Salmon with Lemony Orzo

Ingredients
  

  • 4 salmon fillets 6-8 ounces each
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh dill chopped
  • 1 tablespoon fresh thyme chopped
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 2 tablespoons butter
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions
 

  • Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  • Combine parsley, dill, thyme, garlic, olive oil, salt, and pepper in small bowl.
  • Place salmon on baking sheet, spread herb mixture evenly on top.
  • Bring chicken broth to boil in large skillet.
  • Add orzo, reduce heat, cover, and simmer 8-10 minutes until tender.
  • Bake salmon 12-15 minutes until it flakes easily.
  • Stir butter, lemon juice, and zest into cooked orzo. Season with salt and pepper.
  • Serve salmon over lemony orzo immediately.

Notes

Adjust lemon juice and zest to personal preference. Fresh herbs are essential for best flavor.
