Ingredients
  

  • Chicken Breasts: 1.5 lbs 680g boneless, skinless chicken breasts. Opt for organic or free-range chicken for the best flavor and texture. I like to pound them slightly to ensure even cooking.
  • Honey: 1/4 cup 85g. Use your favorite variety of honey. Clover honey offers a classic sweetness, while wildflower honey brings a more complex flavor, and is what i use.
  • Mustard: 1/4 cup 60g. Dijon mustard adds a tangy kick that balances the sweetness of the honey. You can substitute with yellow mustard for a milder flavor, but dijon is best.
  • Olive Oil: 2 tablespoons 30ml. Extra virgin olive oil adds a subtle richness and helps the chicken brown beautifully.
  • Salt and Pepper: To taste. Season generously to enhance all the flavors. I recommend using freshly ground black pepper.

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Sauce: In a mixing bowl, whisk together the honey, Dijon mustard, and olive oil.
  • Season the Chicken: Season the chicken breasts with salt and pepper.
  • Coat the Chicken: Place the chicken breasts in the baking dish and pour the honey mustard sauce over them, ensuring they are evenly coated.
  • Bake: Bake for 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). The edges should be golden brown, and the center should be firm to the touch.
  • Rest: Let the chicken rest for 5 minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful Honey Mustard Chicken.
  • Serve: Serve immediately and garnish as desired.
  • Check Internal Temperature: At about 20 minutes, take the internal temperature of the thickest part of the chicken breasts.
