No-Bake Peanut Butter Chocolate Balls

Make easy no-bake peanut butter chocolate balls with just a few ingredients. These rich, creamy treats require no oven and are ready in minutes.

Ingredients
  

  • 1 cup creamy peanut butter
  • 1 1/2 cups powdered sugar sifted
  • 1/2 cup 1 stick unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 12 ounces chocolate chips semi-sweet, dark, or milk
  • 1 tablespoon shortening
  • Flaky sea salt optional

Instructions
 

  • In a large bowl, cream together the peanut butter and butter until smooth.
  • Gradually add the powdered sugar and vanilla, mixing until well combined.
  • Roll the mixture into 1-inch balls and place on a parchment-lined baking sheet.
  • Chill in the freezer or refrigerator for at least 30 minutes.
  • Melt the chocolate chips and shortening in a double boiler or microwave, stirring until smooth.
  • Dip each ball into the melted chocolate, coating completely.
  • Return to the baking sheet and sprinkle with sea salt (if using).
  • Chill again until the chocolate is set.

Notes

  • For best results, use natural peanut butter (just peanuts and salt).
  • Store in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 2 months.
