granulated sugar

packed brown sugar

creamy peanut butter

large egg

vanilla extract

- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and
fluffy
Beat in the peanut butter and vanilla extract until well combined.
Beat in the egg until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
Cover the dough and chill in the refrigerator for at least 30 minutes.
Roll the dough into 1-inch balls. Place them on the prepared baking sheet, leaving about 2 inches
between each cookie
Use a fork to gently flatten each cookie in a criss-cross pattern.
Bake for 8-10 minutes, or until the edges are golden brown and the centers are set.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, chill the dough for at least 30 minutes before baking.
