Ingredients
  

  • 1.5 lb 680 g chicken tenders (or boneless breasts cut into ¾-inch strips)
  • 1 sleeve Ritz crackers ~30 crackers / 120 g, finely crushed
  • ½ cup 50 g freshly grated Parmesan cheese
  • 4 Tbsp 56 g butter, melted (optional but classic)

Instructions
 

  • Preheat oven to 375 °F (190 °C). Lightly grease an 8×8-inch casserole dish.
  • Crush Ritz crackers to coarse sand; leave a few pea-sized bits for texture.
  • Stir crackers and Parmesan together.
  • Pat chicken very dry; arrange in a single layer in dish.
  • Sprinkle crumb mixture evenly over chicken.
  • Drizzle melted butter across the top.
  • Bake 18–22 min, until topping is deep golden and thickest tender hits 165 °F.
  • Rest 5 min, then scoop and serve.

Notes

  • Double the batch: bake one, freeze one (unbaked) for up to 2
  • months. Spice it up: add ¼ tsp cayenne or ½ tsp smoked paprika to crumbs.
  • Gluten-free: use GF butter crackers + certified GF Parmesan
