Blend a refreshing tropical mango smoothie with coconut and pineapple flavors. This healthy drink is packed with vitamins and tastes like vacation.

Ingredients
  

  • Frozen Mango Chunks 1 ½ cups/ 250g: Frozen mango is key for a thick, frosty texture. Fresh mango works too, just add a few ice cubes.
  • Frozen Pineapple Chunks ½ cup/ 80g: Adds a delightful tang and tropical flavor. If you’re using fresh, freeze it first for best results.
  • Coconut Milk 1 cup/ 240ml: The creamy base that ties everything together. I prefer full-fat for richness, but light coconut milk works well too.
  • Banana ½ medium/ 55g: Provides sweetness, creaminess, and potassium!
  • Lime Juice 1 tablespoon/ 15ml: A squeeze of lime brightens the flavors and adds a zesty kick.
  • Optional: Honey or Maple Syrup 1 teaspoon/ 5ml: For extra sweetness, if desired. Taste and adjust to your preference.
  • Optional: Chia Seeds 1 tablespoon/ 10g: For a boost of fiber and omega-3s.

Instructions
 

  • Prepare the Fruit: If using fresh mango and pineapple, peel and chop them into chunks. Freeze for at least 30 minutes for best results.
  • Combine Ingredients: Add the frozen mango chunks, frozen pineapple chunks, coconut milk, banana, lime juice, and optional sweetener or chia seeds to your blender.
  • Blend: Start blending on low speed, gradually increasing to high speed until smooth and creamy. This might take 30-60 seconds depending on your blender.
  • Check Consistency: If the smoothie is too thick, add a splash of coconut milk or water. If it’s too thin, add a few more frozen mango chunks.
  • Taste and Adjust: Taste the smoothie and adjust the sweetness or tanginess to your liking. Add more honey or maple syrup for sweetness, or more lime juice for tanginess.
  • Pour: Pour the smoothie into a glass or jar.
  • Garnish (Optional): Garnish with a slice of mango, a sprinkle of shredded coconut, or a sprig of mint.
